One-Pot Creamy Tomato Pasta

A quick, comforting pasta cooked in one pot with tomato, garlic, and a creamy finish.

What you'll need
Ingredients
- 1 tablespoonolive oil
- 1 smallyellow onion, finely diced
- 3 clovesgarlic, minced
- 2 cupsvegetable broth
- 12 ouncespasta
- 1/2 cupheavy cream
- 1/2 cupparmesan cheese
- 1 teaspoonItalian seasoning
- salt and black pepper, to taste
How to make it
Instructions

Heat the olive oil in a large pot over medium heat.

Add the onion and cook for 4–5 minutes, until softened.

Add the garlic and cook for 30 seconds.

Stir in the crushed tomatoes, vegetable broth, pasta, and Italian seasoning.

Bring to a gentle boil, then reduce the heat and simmer uncovered for 12–15 minutes, stirring frequently, until the pasta is tender.

Stir in the heavy cream and parmesan cheese.

Season with salt and black pepper, then cook for another 1–2 minutes until creamy.
Keep in mind
Notes
Add a splash of broth if the sauce gets too thick. Spinach can be stirred in during the last few minutes.
