Egg Roll in a Bowl

A savory mix of ground pork, cabbage, ginger, and garlic with all the flavor of an egg roll, without the wrapper.

What you'll need

- 1 poundground pork
- 1 tablespoonsesame oil
- 1 smallyellow onion, diced
- 3 clovesgarlic, minced
- 1 tablespoonfresh ginger, grated
- 1/3 cuplow-sodium soy sauce
- 1 tablespoonrice vinegar
- 1 tablespoonsriracha, optional
- 1 bagcoleslaw mix, about 14 ounces
- 1/2 cupchicken broth
- 3green onions, sliced
- 1 teaspoonsesame seeds, for serving
How to make it

Set the Instant Pot to Sauté. Add the sesame oil and ground pork, then cook until the pork is browned, breaking it apart as it cooks.

Add the onion, garlic, and ginger. Cook for 1 to 2 minutes, until fragrant.

Stir in the soy sauce, rice vinegar, sriracha, chicken broth, and coleslaw mix.

Secure the lid and set the valve to Sealing. Cook on High Pressure for 1 minute.

When the cook time ends, carefully perform a quick release.

Stir well and let the mixture sit for 2 to 3 minutes so the cabbage can soften and the sauce can thicken slightly.

Serve topped with sliced green onions and sesame seeds.
Keep in mind
Notes
The Instant Pot may take several minutes to come to pressure. For a less-soft cabbage texture, reserve half of the coleslaw mix and stir it in after pressure cooking. Serve over rice.
